Chipolte Black Bean Chili
  • 1 tsp. olive oil
  • 1 cup finely chopped onion
  • 4 tbsp. fresh minced garlic
  • 2 tbsp. chili powder
  • 1 tbsp. Lawry's seasoned salt
  • 1 small chipotle chili in adobo sauce minced
  • 1/4 tsp. black pepper
  • 1/8 tsp. salt
  • 2 15 oz. cans black beans, drained and rinsed
  • 1 15 oz. can red kidney beans
  • 2 14.5 oz. cans diced fire roasted tomatoes
  • 1 pint homemade jalepeno/garlic salsa or a good storebought substitute
  • 1 4.5 oz. can chopped green chilis
  • 1 lb. ground beef, browned
  • 2 16 oz. cans beef broth -- more as needed
Brown ground beef in fry pan. Heat oil in a large pot over medium-high heat. Add onion and garlic. Sauté for 3 minutes. Add other ingredients, including browned ground beef and bring to a boil. Reduce heat and simmer for 45-60 minutes. Add more spices and broth to taste. Download recipe here
